Directed by one of Spain’s most distinguished chefs, Santi Santamaría -proprietor of the three star Michelín, Can Fabes in Sant Celoni, Catalonia- this Grand Master chose the Hesperia for the Madrid launch of his very personal approach to the finest Spanish cuisine. With his passion for impeccably served regional ingredients and flare for generous hospitality, within a short period Santamaría put the Santceloni Restaurant firmly on the Madrid culinary map. The result has been a sell-out and the award of two coveted Michelin stars.
The Santceloni reflects the essence of the Hesperia hotel brand of contemporary hospitality: the marriage of supreme technical skills, lavish attention to detail and self assured, imaginative, avant-garde presentation.
This radiant restaurant, with avant-garde décor by Pascua Ortega, serve just 45 covers, the tables are discretely distanced, lending an unusually spacious and luxurious feel. There is a further select private dining room with seating for 20. The strikingly modern, minimalist, décor reflects the warm rich natural colours of wood and earth. One idiosyncratically rustic table placed just near the kitchen, pays homage to the Can Fabes restaurant.
Santamaria did astutely placed trusted disciples, trained in the kitchen of Can Fabes, in this Madrid restaurant. Chef, Oscar Velasco manages the sophisticated menus, Maitre, Abel Valverde oversees the meticulous service and Sommelier David Robledo has designed a wine list offering a selection of over 700 fine wines.
The cuisine is exquisitely creative, strong on technique, yet simple and rooted in tradition. Dishes display Chef Oscar Velasco obsession for the finest ingredients which are native to the Spanish countryside. Seasonal produce — wild mushrooms and black truffles – flown in daily from Catalonia and Galicia, feature high among the à la carte options.
Achieving the delicate balance between a sense of lavish luxury and contemporary style, owes much to attention to detail. Memorably imaginative table settings feature Baccarat crystal water glasses, wine glasses by the Austrian designer George Riëdel and custom designed silver and ebony cutlery reserved for desert.
